Lemon Sunshine Cake

- 12 oz cream cheese softened shopping list
- 1 cup butter or margarine softened shopping list
- 6 eggs separated shopping list
- 2/3 cup sugar shopping list
- 1 cup ground almonds shopping list
- 2 Tbs. minced fresh lemon balm or lemon verbena leaves shopping list
- 2 tsp grated lemon peel shopping list
- 2 tsp fresh minced marigold petals ( washed and dried ) shopping list
- Additional lemon balm /verbena and marigold blossoms for garnish shopping list
How to make it
- Beat cream cheese, butter, yolks and sugar until light and fluffy.
- Stir in almonds, lemon balm, lemon peel and marigold petals.
- In another bowl beat whites until stiff peaks and gently fold into cream cheese mixture.
- Pour mixture into a greased 9 inch springform pan.
- Place on baking sheet.
- Bake 350F about 55 minutes until golden brown and the sides pull away from pan.
- Cool one hour and remove sides of pan and cool completely.
- Garnish with the lemon balm and blossoms.
- Chill well.
- Texture like a cheesecake!
- Serves 12 .
