How to make it

  • If using a conventional oven, preheat to 375 degrees (F).
  • Drain the tomatoes, reserve the juice.
  • Drain the jalapenos.
  • Combine the juice drained from the tomatoes with the tomato paste, add the seasoned salt, mix well; add the tomatoes, mix.
  • Cut each cheese slice into six pieces; I cut each slice in half, then the halves into three pieces.
  • Arrange unbroken tortilla chips on a cookie sheet or large cooling rack.
  • Coat lightly with the cooking spray, bake for 3 - 4 minutes to add crispness.
  • Spoon about 1/2 teaspoon of tomato mixture on each chip.
  • Put one or two jalapeno slices on each chip.
  • Top with cheese pieces; spray lightly with cooking spray to ensure the cheese melts smoothly.
  • Bake 4 to 5 minutes, or until the cheese melts.
  • Serve.
  • Microwave: use paper plates (not foam plates), you will get about 10 chips per plate; heat on high about 40 seconds to crisp the chips. Add the toppings, heat 45 seconds to a minute on high to melt the cheese. Times will vary with power of the oven, you will have to experiment to find the best time for your microwave
