Sourdough Banana Bread Recipe
This is a nice twist on banana bread. The cinnamon and sourdough add a little "something" to your everyday banana bread. Great for brunches or just a snack.

Ingredients
  • 1/3 cup canola oil
  • 1 cup granulated sugar
  • 1 large egg
  • 1 cup mashed ripe banana
  • 1 cup sourdough starter (I use Herman, but any will do)
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon ground cinnamon
  • 2 cups AP-flour
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda

Directions
  1. Preheat oven to 350*.
  2. Grease and sugar a 9x5 loaf pan.
  3. In a small bowl mix flour, cinnamon, salt, baking soda and baking powder and set aside.
  4. In a large bowl whisk together canola oil and sugar, add egg and mix until blended.
  5. Stir in bananas, sourdough starter and vanilla and mix well.
  6. Add flour mixture to liquid ingredients and stir just until mixed. Do not over mix or bread will be tough.
  7. Pour batter into prepared pan.
  8. Bake for 55-60 minutes, or until a toothpick inserted in the center comes out clean.
  9. Cool in pan on wire rack for 10 minutes.
  10. Remove from pan and continue to cool on wire rack.
  11. Cool bread completely to make slicing easier.
