Porterhouse Steaks Coated With Peppercorns Recipe
PORTERHOUSE STEAKS COATED WITH PEPPERCORNS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Parsons Estate in Kaufman, Texas in 1994.

Ingredients
  • 1/4 cup whole mixed peppercorns
  • 4 thick porterhouse steaks
  • 1/2 teaspoon salt
  • 1/2 cup beef stock

Directions
  1. Crush peppercorns by pressing them against a flat surface with bottom of a heavy pot.
  2. Cover steaks with crushed peppercorns pressing them into the steak firmly.
  3. Season with salt and grill or broil until cooked to desired degree.
  4. Deglaze pan with stock educing liquid and stirring up brown bits in pan.
  5. Spoon over steaks and serve immediately.
