Great casserole to have with a nice salad and some iced tea to top it off.

Ingredients
  • 1 lb ground beef
  • 1 T oil or to coat pan for beef ( I have grown to use olive oil for extra flavor).
  • 1 or 2 cloves of garlic minced-depending on how much you like garlic.
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 med or lg onion chopped
  • 1 green pepper, chopped
  • 1 T chili powder ( I use more but taste it until it's spicy enough for me)
  • 1 16 oz can chili or red kidney beans
  • 1 T Worcestershire sauce ( I also use more and taste test it)
  • 1/4 tsp tobasco or hot sauce
  • 1 16 oz can tomatoes
  • 3/4 cup raw white rice
  • 1/4 cup chopped or diced green olives (optional)
  • 1 cup or more shredded chedder cheese or mexican cheese blend
  • I like a little more cheese added.

Directions
  1. Heat oven to 350.
  2. Brown meat and drain for less fattening or keep grease (original recipe doesn't say to drain)
  3. . Add garlic, salt to taste, pepper, onion, green pepper and chili powder.
  4. Cook until onion is wilted.
  5. Add beans, worcestershire sauce, tomatoes and rice; mix.
  6. Turn into casserole dish and bake .45 minutes.
  7. Add cheese and olives for topping and bake another 15 minutes.
