Cool And Creamy Macaroni Salad

- salt shopping list
- 1lb elbow macaroni shopping list
- 1/2 small red onion,minced shopping list
- 1 celery rib,minced shopping list
- 1/2c minced fresh parsley leaves shopping list
- 2 tbs. juice from 1 lemon shopping list
- 1Tbs Dijon mustard shopping list
- 1/8tsp garlic powder shopping list
- pinch of cayenne shopping list
- 11/2c mayonnaise shopping list
- ground black pepper shopping list
How to make it
- Bring 4qts. water to boil in large pot. Add 1Tbs salt and macaroni and cook till just nearly tender,about 5 mins. Drain and rinse with cold water till cool,then drain briefly so macaroni remains moist. Transfer to large bowl.
- Stir in onion,celery,parsley,lemon juice,mustard,garlic powder,and cayenne and let sit until flavors are absorbed,about 2 mins. Addd mayonnaise and let sit until salad texture is no longer watery,5 to 10 mins. Season with salt and pepper to taste.
- Can be made up to 2 days ahead. Stir in a little warm water to loosen texture,if necessary.
