How to make it

  • In heavy skillet sauté onions in moderately hot oil until golden then stir in tomatoes and pepper.
  • After 2 minutes add spinach, salt and hot pepper then cover and simmer five minutes.
  • Thin peanut butter with several tablespoons of warm water to make a smooth paste.
  • Add to the pot then continue cooking 15 minutes stirring frequently being careful not to scorch.
  • Add small amounts of water as necessary so stew does not stick to the pan.
