Spinach And Blue Cheese Soup Recipe
This makes a wonderful dish for a large group of people!

Ingredients
  • 2 (10 oz.) packages of frozen chopped spinach
  • 1 c. of heavy cream
  • salt to taste
  • ground hot pepper
  • 1 lb. bacon
  • 6 tbsp. of margarine
  • 2 c. of chopped onion
  • 1 c. of all-purpose flour
  • 12 c. of chicken broth
  • 4 c. of milk
  • 8 oz. crumbled blue cheese

Directions
  1. First add some butter and onions to a large pan over medium flame.
  2. Saute this for approx. 3 min.
  3. Now add the flour, mix well.
  4. Next add the broth, letting the flame rise.
  5. Stir this keeping the flour from clumping.
  6. Then add the milk, lowering the flame to low for approx. 5 min.
  7. Next add the blue cheese(stirring).
  8. Now add the spinach and cook approx. 3 min.
  9. Pour in the cream, keeping the flame to almost a boil.
  10. Now turn off flame and stir.
  11. Add salt, pepper and cayenne to taste.
  12. Cool.
  13. Add this to food processor and blend completely.
  14. Ladle into serving bowls!
