Spinach and Blue Cheese Soup

- 2 (10 oz.) packages of frozen chopped spinach shopping list
- 1 c. of heavy cream shopping list
- salt to taste shopping list
- ground hot pepper shopping list
- 1 lb. bacon shopping list
- 6 tbsp. of margarine shopping list
- 2 c. of chopped onion shopping list
- 1 c. of all-purpose flour shopping list
- 12 c. of chicken broth shopping list
- 4 c. of milk shopping list
- 8 oz. crumbled blue cheese shopping list
How to make it
- First add some butter and onions to a large pan over medium flame.
- Saute this for approx. 3 min.
- Now add the flour, mix well.
- Next add the broth, letting the flame rise.
- Stir this keeping the flour from clumping.
- Then add the milk, lowering the flame to low for approx. 5 min.
- Next add the blue cheese(stirring).
- Now add the spinach and cook approx. 3 min.
- Pour in the cream, keeping the flame to almost a boil.
- Now turn off flame and stir.
- Add salt, pepper and cayenne to taste.
- Cool.
- Add this to food processor and blend completely.
- Ladle into serving bowls!
