Grilled Catfish Tacos With Citrus Slaw

- 4 catfish fillets shopping list
- 1 tablespoon mild or hot chili powder shopping list
- 1 tablespoon canola oil shopping list
- 1 tablespoon fresh lemon or lime juice shopping list
- 4 flour tortillas, “soft taco” (10-inch) size shopping list
- Lemon and/or lime wedges shopping list
- Citrus Slaw shopping list
- 2 cups finely shredded cabbage shopping list
- 2 TBS orange juice concentrate (do not dilute) shopping list
- 1/2 cup thinly sliced green bell pepper shopping list
- 1/2 cup thinly sliced onion shopping list
- 2 tablespoons canola oil shopping list
- 2 tablespoons apple cider vinegar shopping list
How to make it
- 1. Prepare grill. Combine chili powder, oil and lemon juice in a small bowl; brush over both sides of fillets. Arrange in a wire-grilling basket coated with cooking spray.
- 2. Place grilling basket on a grill rack; grill 6-8 minutes on each side until catfish flakes easily when tested with a fork. Place 1 fillet on a tortilla, and top with ¾ cup Citrus Slaw. 3. For Citrus Slaw: Combine all ingredients in a bowl; tossing gently. Cover and chill.
