No Cook Avocado Bisque

- 2 large avocados shopping list
- 2 cups buttermilk shopping list
- 4 scallions,green and white parts sliced seperately shopping list
- grated peel and juice of 1 lime shopping list
- 16 ice cubes shopping list
- salt shopping list
- 1 lb. tomatoes,coarsely chopped shopping list
- 3 oz. feta cheese shopping list
- 6 oz tortilla chips shopping list
How to make it
- Using blender,puree 1 avocado,buttermilk and scallion whites. Add the lime peel and three-quarters of the lime juice
- With machine on low speed,blend in ice cubes 1 at a time,until smooth. Season with salt;refrigerate
- Meanwhile,coarsely chop the remaining avocado and transfer to a medium bowl. Add the tomatoes,feta cheese,scallion greens and remaining lime juice
- Divide the soup among 4 bowls. Top with avocado salad and tortilla chips. Serve with remaining tortilla chips on the side.
