Anzac Biscuits Recipe
A traditional Australian biscuit. These biscuits (cookies) were sent overseas to soldiers serving in World War 1.

Ingredients
  • 1 cup plain flour
  • 1 cup rolled oats
  • 3/4 cup coconut
  • 3/4 cup sugar
  • 140g butter
  • 1 tablespoon golden syrup
  • 3 tablespoons boiling water
  • 1 teaspoon bicarbonate of soda

Directions
  1. Sift flour into a bowl. Add rolled oats, coconut and sugar.
  2. Melt butter in a saucepan, add syrup and water. Add baking soda, allow to foam and pour immediately into dry ingredients. Mix well.
  3. Roll level tablespoons of mixture into balls. Place on baking trays, about 5cm apart. Press with a fork to flatten slightly.
  4. Bake in a slow (150°C) oven for 10 minutes or until golden brown.
