How to make it

  • Get you crockpot out and pour in the beef broth, vegetable juice, wine, mushrooms, carrots and tomatoes and start it heating up.
  • On the stovetop, heat the olive oil in a medium saute pan and saute the onion, green pepper, garlic and celery. Saute until the veggies are slightly softened.
  • Add saluted vegetables, London Broil, and barley to the broth in the crock pot. Let it simmer merrily along for 4 - 5 hours while London Bridge is falling down.

    I wish I had started this earlier today. It sure sounds good. I have worked in the garden all day and now I am hingry, but too tired to make dinner. What is the other name for London Broil? I think we call it something else here in Minnesota. I'll have to give this a go.
