Beefeater Barley Soup

- 1 lb London Broil, cooked and cubed shopping list
- 1 cup barley shopping list

- 1 tbsp olive oil shopping list
- 1 cup onion, chopped shopping list
- 1 cup green pepper, chopped shopping list
- 3 cloves garlic, pressed shopping list
- 1 stalk celery diced shopping list

- 8 cups beef broth shopping list
- 2 cups vegetable juice shopping list
- 1 cup red wine shopping list
- 8 oz fresh mushrooms shopping list
- 3 tomatoes chopped shopping list
- 1/2 cup carrots, sliced shopping list

- salt and pepper to taste shopping list
- 1 tsp oregano shopping list
- 1 tsp thyme, fresh shopping list
- 1 bay leaf shopping list
- 1 tsp fennel seeds shopping list
- 1 tsp mustard seeds shopping list
- 1 tsp cayenne shopping list
How to make it
- Get you crockpot out and pour in the beef broth, vegetable juice, wine, mushrooms, carrots and tomatoes and start it heating up.
- On the stovetop, heat the olive oil in a medium saute pan and saute the onion, green pepper, garlic and celery. Saute until the veggies are slightly softened.
- Add saluted vegetables, London Broil, and barley to the broth in the crock pot. Let it simmer merrily along for 4 - 5 hours while London Bridge is falling down.
