Beef And Bean Burritos

- 1 can pinto beans, mashed shopping list
- 4 oz cooked beef, shredded shopping list
- 1 tbsp A-1 Sauce shopping list
- 1/2 cup salsa shopping list
- 1/2 cup onions shopping list
- 1/2 cup peppers (mild variety like bell, cubano or poblano) shopping list
- jalapeno's to taste shopping list
- 4 oz sharp cheddar, shredded shopping list
- 6 tortillas, low-fat low-carb shopping list
How to make it
- Rinse and drain the beans. I have a hand potato masher that I use to do the mashing. You can get a similar effect with a bit more texture by simply chopping the beans up fine. Point is to make them small and mushy.
- Saute the onions pepper and garlic until softened.
- Mix the salsa, A-1 and jalapenos into the beans.
- Add the beef to the sauted vegetables and toss well.
- Add the bean mixture to the vegetables and beef and mix well.
- Let mixture simmer for about 10 minutes.
- Remove from heat to cool slightly.
- Wrap the tortillas into a clean dish towel. Sprinkle the towel lightly with water. Pop it into the microwave and zap for about 45 seconds to warm and soften the tortillas.
- Evenly distribute the mixture on to each tortilla and wrap up burrito style.
- Lightly spray a Pyrex dish with Pam and wipe away any excess spots. Place the burritos into dish and sprinkle the top with cheese.
- Place the burritos into the oven and heat at 375 until cheese is melted - about 10 minutes.
- All done!
