Quick family favorite and a perfect use for that little bit of leftover beef. Make ahead and pop in the oven when you are ready.

Ingredients
  • 1 can Pinto Beans, mashed
  • 4 oz cooked beef, shredded
  • 1 tbsp A-1 Sauce
  • 1/2 cup salsa
  • 1/2 cup onions
  • 1/2 cup peppers (mild variety like bell, cubano or poblano)
  • jalapeno's to taste
  • 4 oz sharp cheddar, shredded
  • 6 tortillas, low-fat low-carb

Directions
  1. Rinse and drain the beans. I have a hand potato masher that I use to do the mashing. You can get a similar effect with a bit more texture by simply chopping the beans up fine. Point is to make them small and mushy.
  2. Saute the onions pepper and garlic until softened.
  3. Mix the salsa, A-1 and jalapenos into the beans.
  4. Add the beef to the sauted vegetables and toss well.
  5. Add the bean mixture to the vegetables and beef and mix well.
  6. Let mixture simmer for about 10 minutes.
  7. Remove from heat to cool slightly.
  8. Wrap the tortillas into a clean dish towel. Sprinkle the towel lightly with water. Pop it into the microwave and zap for about 45 seconds to warm and soften the tortillas.
  9. Evenly distribute the mixture on to each tortilla and wrap up burrito style.
  10. Lightly spray a Pyrex dish with Pam and wipe away any excess spots. Place the burritos into dish and sprinkle the top with cheese.
  11. Place the burritos into the oven and heat at 375 until cheese is melted - about 10 minutes.
  12. All done!
