this dish is cooked in the microwave... great for not heating up the kitchen in the summer... I want to try this with really ripe fresh peaches.. i think the flavor will be awesome...

Ingredients
  • 1 pound scallops
  • 2 tablespoons butter
  • 2 tablespoons lemon juice
  • 1/2 teaspoon salt
  • dash pepper
  • 12 canned peach halves
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon cloves
  • 1/4 teaspoon mace
  • 1/4 teaspoon salt
  • 3 slices bacon

Directions
  1. Combine scallops, butter, lemon juice, salt and pepper in a microwave-safe dish. Cover and cook in microwave on high for 2 minutes. Drain peach halves and place cut side up on another microwave-safe dish. Combine cinnamon, cloves, mace and salt; sprinkle over peaches. Place scallop mixture evenly in the center of each peach half. Cut bacon crosswise in fourths; place a piece on each peach. Cook uncovered in microwave on high for 6 to 7 minutes, rotate dish once during cooking.

I hate to be a downer on you... but any seafood in the micro, especially for that long (and scallops!) is going to be not very nice to smell, nor very tender. I wouldn't have added peaches, but a maple-bacon sauce over seared or grilled scallops (2 min / side max for sea scallops) would be pretty good. Points for experimenting though!
