Char Siu Barbecued Pork Recipe

Ingredients
  • 500g pork tenderloin
  • 3 cloves garlic
  • 1 teaspoon salt
  • ½ teaspoon fresh ginger, grated
  • 1 tablespoon light soy sauce
  • 1 tablespoon honey
  • 1 tablespoon Chinese wine or dry sherry
  • ½ teaspoon five spice powder

Directions
  1. With a sharp knife remove any fat and sinew from the pork.
  2. Crush garlic and combine with all other ingredients (except pork) in a large bowl. Put in the pork, mix well together so that pork is covered on all sides with mixture. Allow to marinate in the fridge overnight.
  3. Half fill a roasting pan with hot water and put a wire rack across the top of the pan. Put pork on rack and roast in hot oven for 30 minutes. Turn pork strips over, brush with remaining marinade and cook for a further 15 minutes or until well glazed and lightly touched with dark brown on the spots where the honey marinade has caramelised.
  4. Cut pork into thin slices to serve.
