How to make it

  • Preheat oven to 160C.
  • Chocolate icing: Place the icing sugar, cocoa, water and butter into a bowl and whisk to combine. Set aside.
  • Place the butter, sugar and vanilla into a bowl and mix with an electric mixer until light and creamy.
  • Gradually add the eggs and beat well.
  • Sift the flour and baking powder together over the butter mixture and mix until well combined. Stir in the milk.
  • Spoon the mixture into a lightly greased slice tin and bake for 20 minutes or until cooked when tested with a skewer.
  • While still warm, cut the slice into squares and carefully pour the chocolate icing evenly over it. Top with coconut.
