Dessert Croutons Recipe
With the summer months approaching, this is a "cool" way to dress up your dessert(s). Sprinkle the warm "croutons" over ice cream or cold peach soup. Nice for a dinner party, as well.

  • Pound cake

Directions
  1. Slice & cube the poundcake - about 1" cubes. Place on a nonstick baking sheet and bake at 350 - turn halfway thru baking, about 4 mins through cooking time. Keep checking so it doesn't get too brown. Alternately, you can saute the pound cake slices/cubes in butter in a skillet, or grill with assorted fruits of choice, ie mangos, peaches, pineapple, etc.
  2. The pound cake cake can be any flavor of choice i.e. marble, chocolate, chocolate chip etc.
  3. A few ideas for the "croutons":
  4. Parfaits - Layer lemon yogurt (or honey mixed w vanilla yogurt), w berries - strawberries, blueberries, or mangos.
  5. Top a fruit soup (strawberry, peach etc.) with the "croutons."
  6. Ice cream parfaits.
  7. Fruit trifle.
  8. Grilled fruit kebabs & pound cake croutons. Alternate the fruits with the cubed pound cake on skewers.
  9. Let your imagination be your guide.

Well, I have to agree with your intension of having these croutons with your chilled peach summer soup. They'd have to add a nice texture. All I need now, is a bit of spare pound cake. I'll just have to snitch a bit, at my next opportunity. Cheers.
