How to make it

  • Just dice all the vegetables using the mandolin because it is so easy and fast and such a cool tool. Then wash the cilantro and break off the tips or cut with kitchen shears amounting to about 1 cup or so. You can vary all these ingredients depending on your food tastes.
  • Other additions which would be good:
  • Fresh pineapple chunks-without sugar adds a nice little sweetness but amazingly still goes with the savory ingredients.
  • Green, red or yellow bell peppers or a combination of all three-This adds crunch, color and texture as well as flavor to this versatile dish.
  • I like to add this to soups, salad as a replacement for some of the dressing-or even mixed in your Ranch Dressing! You can mix up to ½ Low Fat Ranch Dressing and ½ Paulette’s Fresh & Versatile Salsa.
  • It is a simple recipe but it turned out really good. It is good stirred into Lentil Soup-which I had. I'm sure it would be good to make rice with as well.

    Polly sweetheart, this looks so lovely and refreshing. I am on the hunt for light, summery foods now that (at long last!) Summer is here in Scotland. I will save this and try it out with some of the variations you suggest.
