How to make it

  • Preheat oven to 350°F.
  • Sift flour and baking powder in bowl; set aside.
  • In a another large bowl, beat egg white and cream of tartar until meringue-like but not stiff.
  • Gradually add sugar while beating.
  • Then, add vanilla and vegetable oil.
  • Divide sifted cake flour with baking powder into four.
  • Add one part of the flour mixture, beat with a spoon until lumps are gone.
  • Add egg yolks one at a time and alternately with 1 part of the flour mixture Continue beating until smooth.
  • Line small muffin pans (serves 9 big muffin cups) with paper cups and pour mixture about 2/3 full.
  • Bake 20-25 minutes or until golden brown. Finished when toothpick comes out clean.

    I tried this recipe with a little twist: reduced tartar to just a quarter tsp, added a pinch of salt and yellow food coloring. They look like proper mamons from the shop and tasted yummy!

    Chibi naru: maybe you need to cut down the cream of tartar.. too much of it causes bitter taste after taste

    hi I tried your recipe and it turned out good, the texture's nice but the problem was the taste, after eating the cake it brought me sour like flavour. Do you know what happened into it?

    Thanks nette77 for taking interest in the recipe.

    First, try to check the measurements of your ingredients, especially the baking powder since it's the main leavening agent on the recipe. But sometimes even if we follow the recipe as is, the result may still vary. I think the brand or type of the ingredients can also be a factor so just...try and try again! :)

    I tried this recipe today... mine were really fully grown! They didn't come out flat... what did I do wrong? I love Goldilocks Mamon and I was a little bit disappointed with my overgrown cupcakes, hehehe! Tasted good though. Thanks a lot for your help!!!

    This is as close to Goldilocks as I've ever gotten in my (many!) attempts to make a Filipino cake. Really very very good. Made it into a layer cake w/ Coconut Buttercream from Epicurious (but cut the frosting's sugar down to 3/4 cup and used vanilla extract instead of coconut this time) and the results were really fantastic! The frosting was also very close to Goldilocks'.
