BISTEC A LA MEXICANA RECIPE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Schmidt Estate in Duncanville, Texas in 1988.

Ingredients
  • 1 garlic clove peeled
  • 1 large jalapeno stemmed and halved
  • 2 medium ripe tomatoes
  • 1/3 cup cilantro roughly chopped
  • 1 large green onion roots and wilted outer leaves removed chopped into small pieces
  • 1 tablespoon fresh lime juice
  • 1/2 teaspoon salt
  • 1 tablespoon olive oil
  • 2 pounds thin beef steak
  • 1/2 cup beef broth

Directions
  1. Drop garlic and chili pieces one at a time into a running food processor.
  2. Let each get finely chopped before adding the next.
  3. Turn off the processor and remove the lid.
  4. Cut 1 tomato in quarters and add it to the food processor along with the cilantro.
  5. Pulse until you have a coarse puree then scrape mixture into a bowl.
  6. Cut the other tomato into 1/4" pieces and add to bowl along with green onion.
  7. Taste and season with lime juice and salt.
  8. Heat a wok over medium high heat then drizzle in a little oil.
  9. In two batches stir fry steak until lightly browned.
  10. Remove to a plate leaving behind as much oil as possible.
  11. Stir fry salsa until reduced approximately 10 minutes.
  12. Add 1/2 cup broth then returned browned meat to pan and bring to a boil.
  13. Pour salsa over beef and serve immediately.
