- 200g plain flour shopping list
- 150g wholemeal flour shopping list
- 75g oats shopping list
- 2tsp baking powder shopping list
- 1 tsp bicarbonate of soda shopping list
- 1 tsp cinammon shopping list
- 1/2 tsp ground ginger shopping list
- 2 eggs shopping list
- 2 egg whites shopping list
- 150g brown sugar shopping list
- 50g grated coconut shopping list
- 4 tbsp rapeseed oil shopping list
- 5 tbsp yoghurt (I use 0% fat) shopping list
- 1 tsp vanilla shopping list
- 150g apple sauce shopping list
- 165g grated carrot shopping list
- 50g grated courgette shopping list
- 100g raisins shopping list
- 60g nuts shopping list
- 1 apple, peeled and chopped shopping list
How to make it
- Mix plain and wholemeal flours, baking powder, bicarb and spices.
- Beat together eggs, egg whites, sugar and oil and add to flour mixture.
- Mix in all the other ingredients until they are well blended.
- Place mixture into muffin trays and bake on medium temperature for about 20 minutes - until skewer inserted into the centre comes out clean.
