Chilled Shrimp Cocktail Soup Recipe
'Tis the season for cold soups. Pair this with a hearty Caesar salad and crusty bread and it's a hot weather meal.

Ingredients
  • 3 cups V8 vegetable juice (I use the spicy kind!)
  • 1 (11 ounce) container seafood cocktail sauce
  • 16 ounces cooked salad shrimp, thawed if frozen
  • 1 large ripe tomato, seeded and diced
  • 1/2 green bell pepper, diced
  • 1/2 medium cucumber, peeled and diced
  • 3 to 4 green onions, thinly sliced
  • Tabasco or hot pepper sauce to taste
  • Prepared horseradish to taste

Directions
  1. Combine.
  2. Chill.
  3. Easy, huh?

That is definitely easy enough, and a cold soup sounds good in the heat we are having!


Now this is what I call YUMMMMMMMMY, AWESOME! Made a 1/2 batch last night.... as a TV snack... OMG. We fought over it! Great post...
I did add lime juice and cilantro.


I never thougth of adding lime juice and cilantro. Thanks for the idea!
