Bacon Cheddar Chestnut Cheesecake

- 1 pound Philly cream cheese, softened shopping list
- 2 large eggs shopping list
- 2 teaspoons lemon juice shopping list
- 3 strips bacon, cooked crisp, drained, crumbled shopping list
- 1/4 teaspoon pepper shopping list
- 1/2 cup chestnuts, roasted, chopped fine shopping list
- 1/2 cup sharp cheddar cheese, shredded shopping list
How to make it
- Spray the bottom and sides of 6 or 8 inch spring-pan with cooking spray
- Swirl 1/2 cup of bread crumbs or crushed crackers (Ritz) to dust sides and bottom of pan.
- Set in fridge.
- Blend cream cheese until smooth.
- Add eggs one at a time.
- Add lemon juice and pepper.
- Fold in bacon, chestnuts, and cheese, mixing thoroughly.
- Pour into prepared pan.
- Bake at 325^ for 45-50 minutes.
- Let cool and serve at room temperature.
- Leftovers can be refridgerated or frozen in a tight wrapping of plastic.
