Walnut And Banana Crunch Recipe
Sweet & nutty, quick & easy!! This is a good little recipe to use if your bananas are just about to turn....Mine turned years ago..:-//

Ingredients
  • 4 oz unsalted butter
  • 4 oz molasses sugar or brown sugar
  • 2 eggs
  • 4 oz wholemeal self-raising flour
  • 2 bananas, mashed
  • 3 oz walnuts, chopped

Directions
  1. Heat your oven to 190c (375f)...grease & line an 8-10'' shallow tin. Cream the butter & sugar until light & fluffy. Beat in the eggs one at a time, adding a teaspoon of flour with the second egg, fold in the remaining flour, bananas & 2 oz of the nuts.
  2. Spread the mixture evenly in the tin & spread the leftover walnuts on top. Bake for 20-25 minutes. Once you remove it from the oven, just leave for a couple of minutes in the tin before leaving to cool on a wire rack.
