How to make it

  • Preheat oven to 220degC
  • Line a 22cm square cake pan and 2 baking trays with baking paper.
  • Place 1 sheet pastry per tray- prick all over with a fork and bake 10-12 mins until golden and crisp.
  • Press to flatten if necessary.
  • Using a small serrated knife, trim edges to fit the pan and place 1 piece into the base.
  • Combine custard powder and caster sugar in a saucepan.
  • Gradually stir in 300ml thickened cream and 2 1/2 cups skim milk until smooth.
  • Stir over medium heat until custard boils and thickens.
  • Pour custard over pastry base and press second pastry sheet on top. Set aside to cool.
  • Mix icing sugar and passionfruit pulp and melted butter until smooth.
  • Spread icing over slice and chill until firm.
  • Cut into squares......
