Passionfruit Vanilla Slice

- 2 sheets puff pastry shopping list
- 1 cup custard powder shopping list
- 1/2 cup caster sugar shopping list
- 300ml thickened cream shopping list
- 2 1/2 cups skim milk shopping list
- 1 1/2 cups pure icing sugar shopping list
- 1/3 cup passionfruit pulp shopping list
- 1 tbspn melted butter shopping list
How to make it
- Preheat oven to 220degC
- Line a 22cm square cake pan and 2 baking trays with baking paper.
- Place 1 sheet pastry per tray- prick all over with a fork and bake 10-12 mins until golden and crisp.
- Press to flatten if necessary.
- Using a small serrated knife, trim edges to fit the pan and place 1 piece into the base.
- Combine custard powder and caster sugar in a saucepan.
- Gradually stir in 300ml thickened cream and 2 1/2 cups skim milk until smooth.
- Stir over medium heat until custard boils and thickens.
- Pour custard over pastry base and press second pastry sheet on top. Set aside to cool.
- Mix icing sugar and passionfruit pulp and melted butter until smooth.
- Spread icing over slice and chill until firm.
- Cut into squares......
