Ingredients
  • 2 sheets puff pastry
  • 1 cup custard powder
  • 1/2 cup caster sugar
  • 300ml thickened cream
  • 2 1/2 cups skim milk
  • 1 1/2 cups pure icing sugar
  • 1/3 cup passionfruit pulp
  • 1 tbspn melted butter

Directions
  1. Preheat oven to 220degC
  2. Line a 22cm square cake pan and 2 baking trays with baking paper.
  3. Place 1 sheet pastry per tray- prick all over with a fork and bake 10-12 mins until golden and crisp.
  4. Press to flatten if necessary.
  5. Using a small serrated knife, trim edges to fit the pan and place 1 piece into the base.
  6. Combine custard powder and caster sugar in a saucepan.
  7. Gradually stir in 300ml thickened cream and 2 1/2 cups skim milk until smooth.
  8. Stir over medium heat until custard boils and thickens.
  9. Pour custard over pastry base and press second pastry sheet on top. Set aside to cool.
  10. Mix icing sugar and passionfruit pulp and melted butter until smooth.
  11. Spread icing over slice and chill until firm.
  12. Cut into squares......
