How to make it

  • peel and dice potato. Dice spinach and onion, place all vegetables in a bowl with chili, besan flour and water.
  • Mix till flour is blended
  • Heat a cup of vegetable oil in a wok or small saucepan.
  • Slowly place a spoonful of battered mixture into the hot oil, pressing it against the side to prevent splitting up. Turn over lots, cook until browned but not burnt; drain on absorbent paper.
  • Serve pakoras with sweet chili sauce or ketchup.
