Caramel Cashew Cheesecake Recipe
The sweetness of caramel with the slight saltiness and nutty flavors of the cashews give nice balance to this cake. A decadent, yet lighter cheesecake.

  • Crust:
  • 2 cups 'Nilla wafers, crushed
  • 1/4cup sugar
  • 4Tbsp. butter, softened
  • Filling:
  • 2 pounds Philly cream cheese, softened
  • 1 1/4 cups sugar
  • 4 Tbsp flour
  • 5 large eggs
  • 1 ounce Caramel extract (Bickford's)
  • 1/2 cup heavy cream
  • 3/4 cup cashews, finely chopped

Directions
  1. Preheat oven to 500^
  2. Crust:
  3. Mix all ingredients completely.
  4. Butter sides and bottom of 10" spring-pan.
  5. Press crumb mixture onto sides and bottom of pan.
  6. Set in fridge.
  7. Filling:
  8. Blend cream cheese, sugar, and flour until smooth.
  9. Add eggs one at a time.
  10. Add extract and cream, mixing thoroughly.
  11. Fold in cashew pieces.
  12. Pour into prepared and bake at 500^ for 15 minutes.
  13. Leave cake in oven and reduce temp. to 250^ and continue baking for 1 hour.
  14. Let cool and refridgerate before serving
