Greek Green Lentil Salad Recipe

Ingredients

8 cups mixed salad greens

1/4 red onion sliced

1/2 cucumber slicedinto half moons

2 tomatoes cut into wedges

16 kalamata olives, pitted

1 cup cooked green lentils

Feta cheese as neeede to crumble over slalad

Dressing:

1 Tbs Dijon mustard

3 tbs red wine vinegar

1 clove garlic minced

salt and pepper to taste

Directions

Prep does not include the cooking of the lentils!

Make vinegrette and place in shaker jar, shake to combine

Place salad ingrdients in a large bowl

Pour on dressing

Toss lightly to combine

Crumble on feta over top

Serve immediately

Multiply recipe as needed!
