Chinese Style Barbecued Salmon Recipe
Sweet pineaple contrasts with the soy-semame flavors that make up the marinade for this salmon.

Ingredients
  • Marinade;
  • 3Tbs molasses
  • 3 Tbs mirin,dry sherry or chicken broth
  • 1Tbs soy sauce
  • 1Tbs dark sesame oil
  • 2 garlic cloves,minced
  • 1 tbs minced fresh ginger
  • Salmon:
  • 4(6 to 8 oz) skin-on center-cut salmon fillets(1 to 11/2" thick)
  • 4 fresh pineapple rings(3/4" thick) if desired

Directions
  1. Combine all marinade ingredients in small bowl. Place salmon in a single layer in glass baking dish. Pour marinade over salmon,turning to coat. Refrigerate 1 hour,turning at least once.
  2. Heat gril,oil grate. Remove salmon from marinade. grill salmon skin0side up,covered,over med-high heat 3 to 4 mins or till salmon can be turned without sticking;turn. Grill additional 3 mins or till salmon begins to flake. Remove skin.
  3. Brush pineapple with 1 tsp of reserved marinade;grill 2 mins. or till browned,turning once. Cut i quarters,arrange over salmon.
  4. Bring remaining marinade to a boil in small saucepan,boil 2 to 3 mins.or till slightly reduced. Drizzle over salmon.
