Cranberry Glazed Chicken Recipe
This is a recipe I obtained from a church friend a few years back. She served this and it was a huge hit and it is now a mainstay in my home. Enjoy

Ingredients
  • 1/2 cup plus 1 tablespoon flour divided
  • 1-1/4 teaspoon salt divided
  • 1/8 teaspoon freshly ground black pepper
  • 3 pounds boneless skinless chicken
  • 3 tablespoons butter
  • 3 tablespoons cooking oil
  • 3/4 cup water
  • 1 cup brown sugar firmly packed
  • 1 tablespoon wine vinegar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground allspice
  • 1-1/2 cups fresh cranberries

Directions
  1. Preheat oven to 350 then combine 1/2 cup flour, 1 teaspoon salt and pepper.
  2. Roll chicken pieces in flour mixture then brown in oil and butter in large skillet.
  3. When brown remove from pan and place in baking dish.
  4. In skillet with drippings mix until smooth water, brown sugar, vinegar and 1 tablespoon flour.
  5. Stir in cinnamon, cloves, allspice and remaining salt.
  6. Add cranberries and cook slowly stirring constantly for 10 minutes.
  7. Pour sauce over chicken pieces and bake for 1 hour.
