Angelas Chayote Hot Pepper Sauce

- 2 tbsp cooking oil shopping list
- 1 large onion finely chopped shopping list
- 2 garlic cloves chopped shopping list
- 3 spring onions chopped (use green and white parts) shopping list
- 1/2 lb chayote squash, chopped, keep skin on shopping list
- 12 fresh red hot peppers seeded shopping list
- 1/8 tsp salt shopping list
- 1/2 pint malt or regular vinegar shopping list
How to make it
- Heat oil in frying pan and sauté the onion, garlic, onions until very lightly browned. Put the chayote squash into a saucepan with cold water to cover and simmer covered until tender about 20 minutes. Drain and let cool. Combine all the ingredients in a food processor and process until smooth. Season to taste. Serve sparingly with meat or fish. Extremely hot. Keeps indefinately in the refrigerator.
