Angelas Chayote Hot Pepper Sauce Recipe
This is an extremely HOT sauce to be used sparingly with meat or anything you want to kick up a few notches. A 1/4 of a tsp is all you need.

Ingredients
  • 2 tbsp cooking oil
  • 1 large onion finely chopped
  • 2 garlic cloves chopped
  • 3 spring onions chopped (use green and white parts)
  • 1/2 lb chayote squash, chopped, keep skin on
  • 12 fresh red hot peppers seeded
  • 1/8 tsp salt
  • 1/2 pint malt or regular vinegar

Directions
  1. Heat oil in frying pan and sauté the onion, garlic, onions until very lightly browned. Put the chayote squash into a saucepan with cold water to cover and simmer covered until tender about 20 minutes. Drain and let cool. Combine all the ingredients in a food processor and process until smooth. Season to taste. Serve sparingly with meat or fish. Extremely hot. Keeps indefinately in the refrigerator.
