How to make it

  • In a large skillet or Wok heat 2Tbsp oil over meduim-high heat.
  • Stir-fry chicken until no longer pink. Remove chicken from skillet or Wok and set aside.
  • Add 1 Tbsp oil to skillet or Wok and add garlic, green onion and sauté 30 seconds.
  • Add broccoli, cauliflower and carrots and Stir-Fry until crisp tender.
  • Add chicken to the skillet or wok.
  • Stir in ground ginger. Mix well.
  • Lower heat.
  • Add Miracle Whip, Mix well.
  • Add Soy Sauce, Mix well.
  • Heat until just bubbling.
  • Serve immediately over hot white cooked rice.
  • Other Options: I have subtracted the cauliflower (because I don't like it) and have added slivered almonds. For the julienne carrots buy already shredded ( nice short cut). I have also added more cloves ( total 3) of garlic as we love garlic and sometimes have to add more Miracle Whip if too dry. I also cut down the chicken as there are only the two of us.
  • Just adjust vegetables, meats and such to suite your taste.
  • Believe me this is a very tasty stir-fry.
