Ingredients
  • 3 tbsp oil
  • 1 cup broccoli flowerets
  • 1 cup cauliflowerets
  • 3/4 cup 2 inch julienne-cut carrots
  • 1/4 cup green onion slices
  • 1 garlic clove, minced
  • 3 chicken breast halves, skinned, boned and cut into 1 inch pieces
  • 1/2 cup Miracle Whip Salad Dressing
  • 1/2 tsp ground ginger
  • 1 tbsp Soy Sauce
  • Hot cooked white rice.

Directions
  1. In a large skillet or Wok heat 2Tbsp oil over meduim-high heat.
  2. Stir-fry chicken until no longer pink. Remove chicken from skillet or Wok and set aside.
  3. Add 1 Tbsp oil to skillet or Wok and add garlic, green onion and sauté 30 seconds.
  4. Add broccoli, cauliflower and carrots and Stir-Fry until crisp tender.
  5. Add chicken to the skillet or wok.
  6. Stir in ground ginger. Mix well.
  7. Lower heat.
  8. Add Miracle Whip, Mix well.
  9. Add Soy Sauce, Mix well.
  10. Heat until just bubbling.
  11. Serve immediately over hot white cooked rice.
  12. Other Options: I have subtracted the cauliflower (because I don't like it) and have added slivered almonds. For the julienne carrots buy already shredded ( nice short cut). I have also added more cloves ( total 3) of garlic as we love garlic and sometimes have to add more Miracle Whip if too dry. I also cut down the chicken as there are only the two of us.
  13. Just adjust vegetables, meats and such to suite your taste.
  14. Believe me this is a very tasty stir-fry.
