How to make it

  • Preheat oven to 180degC. line a baking tray with baking paper.
  • Put rhubarb onto tray and sprinkle with sugar. Bake for 10-15 mins or until just tender.
  • Lightly grease 6 teacups with butter. Using a beater, beat sugar and vanilla until light and creamy.
  • sift flour over butter mixture and add milk.
  • Using a large metal spoon, gently stir until well combined.
  • Spoon rhubarb into prepared teacups. Top with batter.
  • Place cups onto a baking tray and bake for 20-25 mins or until mixture springs back when gently pressed in the centre.
  • Sprinkle with icing sugar and serve with thick cream.....

    This sounds amazing. I am a huge fan of rhubarb and though it is sometimes hard to find, when I do find it, I treasure it and make goodies like this. Great post and a very high 5.
