Rhubarb Pudding

- 1 bunch rhubarb, trimmed and cut into 3cm pieces shopping list
- 2 tbs caster sugar shopping list
- 125g butter, softened shopping list
- 1/2 cup caster sugar, extra shopping list
- 1 tsp vanilla extract shopping list
- 1 1/4 cups self raising flour shopping list
- 1/4 cup milk shopping list
- 2 tbs icing sugar shopping list
- double thick cream, to serve shopping list
How to make it
- Preheat oven to 180degC. line a baking tray with baking paper.
- Put rhubarb onto tray and sprinkle with sugar. Bake for 10-15 mins or until just tender.
- Lightly grease 6 teacups with butter. Using a beater, beat sugar and vanilla until light and creamy.
- sift flour over butter mixture and add milk.
- Using a large metal spoon, gently stir until well combined.
- Spoon rhubarb into prepared teacups. Top with batter.
- Place cups onto a baking tray and bake for 20-25 mins or until mixture springs back when gently pressed in the centre.
- Sprinkle with icing sugar and serve with thick cream.....

This sounds amazing. I am a huge fan of rhubarb and though it is sometimes hard to find, when I do find it, I treasure it and make goodies like this. Great post and a very high 5.
