Ingredients
  • 1 bunch rhubarb, trimmed and cut into 3cm pieces
  • 2 tbs caster sugar
  • 125g butter, softened
  • 1/2 cup caster sugar, extra
  • 1 tsp vanilla extract
  • 1 1/4 cups self raising flour
  • 1/4 cup milk
  • 2 tbs icing sugar
  • double thick cream, to serve

Directions
  1. Preheat oven to 180degC. line a baking tray with baking paper.
  2. Put rhubarb onto tray and sprinkle with sugar. Bake for 10-15 mins or until just tender.
  3. Lightly grease 6 teacups with butter. Using a beater, beat sugar and vanilla until light and creamy.
  4. sift flour over butter mixture and add milk.
  5. Using a large metal spoon, gently stir until well combined.
  6. Spoon rhubarb into prepared teacups. Top with batter.
  7. Place cups onto a baking tray and bake for 20-25 mins or until mixture springs back when gently pressed in the centre.
  8. Sprinkle with icing sugar and serve with thick cream.....

This sounds amazing. I am a huge fan of rhubarb and though it is sometimes hard to find, when I do find it, I treasure it and make goodies like this. Great post and a very high 5.
