Cream Cheese Tarts

- 2 8-oz packages cream cheese; softened shopping list
- 1 c sugar shopping list
- 1 tsp pure vanilla extract shopping list
- 2 eggs shopping list
- 24 vanilla wafers (full or crushed) shopping list
- 1 can pie filling; any flavor/choice (or use fresh sliced fruit) shopping list
- Cupcake liners shopping list
How to make it
- Preheat oven 350 degrees.
- Place cupcake liners in each muffin cup and add wafers top side up or enough crushed wafers to cover bottom.
- Soften cream cheese then beat with electric mixer until fluffy.
- Add sugar & vanilla; beat well.
- Add eggs 1 at a time; beat well after each addition.
- Spoon cream cheese mixture over wafers.
- Bake 20 - 30 minutes or until golden on top.
- Allow tarts to cool completely then add pie filling or fresh fruit on top of tart and serve.
