It's a mini cheesecake of sorts. The topping is optional but on the pic it is strawberry.

Ingredients
  • 2 8-oz packages cream cheese; softened
  • 1 c sugar
  • 1 tsp pure vanilla extract
  • 2 eggs
  • 24 vanilla wafers (full or crushed)
  • 1 can pie filling; any flavor/choice (or use fresh sliced fruit)
  • Cupcake liners

Directions
  1. Preheat oven 350 degrees.
  2. Place cupcake liners in each muffin cup and add wafers top side up or enough crushed wafers to cover bottom.
  3. Soften cream cheese then beat with electric mixer until fluffy.
  4. Add sugar & vanilla; beat well.
  5. Add eggs 1 at a time; beat well after each addition.
  6. Spoon cream cheese mixture over wafers.
  7. Bake 20 - 30 minutes or until golden on top.
  8. Allow tarts to cool completely then add pie filling or fresh fruit on top of tart and serve.
