How to make it

  • Preheat skillet with oil over medium heat.
  • Tear apart corn tortillas by hand into small bite sized pieces.
  • Toss into skillet and fry tortilla until getting slightly golden. Make sure tortilla doesn’t get too crispy.
  • Add eggs, salt & pepper and scramble/mix together.
  • When egg is almost done add cheese (optional) and cook until egg is done.
