How to make it

  • Toss together the pasta, peppers, tomatoe, scallions, feta, and olives. Whisk together the remaining ingredients and pour it over the salad. Serve immediately or refrigerate for up to 24 hours before serving.

    I made this today and it was scrumptious. I'm just one, so I cut the recipe in half, which was very easy since the feta comes in 4oz. packages anyway. I would be proud to bring this to a BBQ this summer if the occasion arises. I also did a nutrition analysis on www.caloriecounter.com and it is only 343 very nutritious calories per serving. And the servings are large and satisfying.
