This is a recipe I obtained from my friend who owns a bed and breakfast in East Texas. This is one of her most requested breakfast/brunch recipes. It's yummy.

Ingredients
  • 10 eggs
  • 1 teaspoon baking powder
  • 8 ounces cheddar cheese shredded
  • 8 ounces canned diced chilies
  • 1/2 cup flour
  • 16 ounces small curd cottage cheese
  • 1/2 cup melted butter
  • 1/2 teaspoon salt

Directions
  1. Beat eggs until light and lemon colored then add flour, baking powder, salt, cheeses and butter.
  2. Blend then stir in chilies and pour into well greased buttered pan and bake at 350 for 35 minutes.
