Crispy Macaroni Cheese Recipe

	Shrover / All my dishes 5 months, 3 weeks ago Classic macaroni cheese with a bit extra everyone has there own cheese sauce recipe but it's there if you need it. If there's left over chili, you can use it as a base for the macaroni before popping in the oven. Prep:20m Cook:20m Servings:4	Shrover

Ingredients

250g/9oz macaroni

40g/1.5oz butter

40g/1.5oz plain flour

600ml/1pint milk

250g/9oz grated cheddar

50g/2oz grated parmesan

1 handful of mushrooms roughly chopped

1 onion roughly chopped

3-4 strips of bacon fried and roughly chopped

2 packs of crisps/chips. salt n vinegar/cheese n onion? up to you

Directions

Cook the macaroni as per instructions, drain and set aside

fry the bacon adding the onions and mushrooms for the last few minutes and set aside

melt butter over medium heat in a large saucepan

add the flour and stir to form a roux, cooking for a few minutes

gradually whisk in the milk, a little at a time. cook for 10-15min until you have a smooth thickened sauce

meanwhile preheat oven to hot

remove the sauce from the hob, add 175g/6oz of the cheese and stir until cheese is well combined and melted

add the macaroni, bacon, onions and mushrooms to the sauce and mix well with some pepper

transfer to deep suitably sized ovenproof dish

sprinkle over crushed crisps and remaining cheese, a few tomato slices for a bit of colour

place in oven until cheese melts
