Crispy Macaroni Cheese

- 250g/9oz macaroni shopping list
- 40g/1.5oz butter shopping list
- 40g/1.5oz plain flour shopping list
- 600ml/1pint milk shopping list
- 250g/9oz grated cheddar shopping list
- 50g/2oz grated parmesan shopping list
- 1 handful of mushrooms roughly chopped shopping list
- 1 onion roughly chopped shopping list
- 3-4 strips of bacon fried and roughly chopped shopping list
- 2 packs of crisps/chips. salt n vinegar/cheese n onion? up to you shopping list
How to make it
- Cook the macaroni as per instructions, drain and set aside
- fry the bacon adding the onions and mushrooms for the last few minutes and set aside
- melt butter over medium heat in a large saucepan
- add the flour and stir to form a roux, cooking for a few minutes
- gradually whisk in the milk, a little at a time. cook for 10-15min until you have a smooth thickened sauce
- meanwhile preheat oven to hot
- remove the sauce from the hob, add 175g/6oz of the cheese and stir until cheese is well combined and melted
- add the macaroni, bacon, onions and mushrooms to the sauce and mix well with some pepper
- transfer to deep suitably sized ovenproof dish
- sprinkle over crushed crisps and remaining cheese, a few tomato slices for a bit of colour
- place in oven until cheese melts
