AFGHANISTAN ALMOND PUDDING This recipe came from an estate sale. I obtained it when I purchased the family collection from the Hayden Estate in Caddo Mills, Texas in 1984.

Ingredients
  • 3 cups milk
  • 1/3 cup granulated sugar
  • 1/2 cup cornstarch
  • 1/4 cup cold water
  • 1/2 cup chopped blanched almonds
  • 1/2 teaspoon ground cardamom
  • 1/4 teaspoon ground saffron
  • 1/4 cup finely chopped pistachio nuts

Directions
  1. Combine 2-1/2 cups of the milk and sugar in a saucepan over moderate heat.
  2. Stir to dissolve sugar.
  3. Mix remaining milk, cornstarch and water together and stir into the warm milk.
  4. Add almonds and stir constantly until mixture comes to a boil.
  5. Reduce heat then add cardamom and saffron then simmer gently for 5 minutes stirring often.
  6. Pour into 6 individual serving bowls and garnish with chopped pistachios.
  7. Serve chilled or at room temperature.
