Afghanistan Almond Pudding

- 3 cups milk shopping list
- 1/3 cup granulated sugar shopping list
- 1/2 cup cornstarch shopping list
- 1/4 cup cold water shopping list
- 1/2 cup chopped blanched almonds shopping list
- 1/2 teaspoon ground cardamom shopping list
- 1/4 teaspoon ground saffron shopping list
- 1/4 cup finely chopped pistachio nuts shopping list
How to make it
- Combine 2-1/2 cups of the milk and sugar in a saucepan over moderate heat.
- Stir to dissolve sugar.
- Mix remaining milk, cornstarch and water together and stir into the warm milk.
- Add almonds and stir constantly until mixture comes to a boil.
- Reduce heat then add cardamom and saffron then simmer gently for 5 minutes stirring often.
- Pour into 6 individual serving bowls and garnish with chopped pistachios.
- Serve chilled or at room temperature.
