How to make it

  • Combine 2-1/2 cups of the milk and sugar in a saucepan over moderate heat.
  • Stir to dissolve sugar.
  • Mix remaining milk, cornstarch and water together and stir into the warm milk.
  • Add almonds and stir constantly until mixture comes to a boil.
  • Reduce heat then add cardamom and saffron then simmer gently for 5 minutes stirring often.
  • Pour into 6 individual serving bowls and garnish with chopped pistachios.
  • Serve chilled or at room temperature.
