Baked Pork Chops And Macaroni Creole Recipe
BAKED PORK CHOPS AND MACARONI CREOLE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Hayden Estate in Caddo Mills, Texas in 1984.

Ingredients
  • 4 pork chops
  • 1 tablespoon salad oil
  • 1 cup sliced white onions
  • 1 clove garlic crushed
  • 1 pound canned tomatoes whole with juice
  • 1/2 teaspoon dried thyme
  • 1 bay leaf crumbled
  • 3/4 teaspoon salt
  • 1/8 teaspoon freshly ground pepper
  • 2 cups cooked elbow macaroni

Directions
  1. Wipe chops with damp paper towel then trim excess fat.
  2. Place on rack in broiler pan then broil on both sides until nicely browned.
  3. Place onions and garlic in skillet with hot oil and sauté for 5 minutes.
  4. Add tomatoes, thyme, bay leaf, salt and pepper and mix well.
  5. Add cooked macaroni to tomato mixture then mix well and arrange chops on top.
  6. Bake covered for 40 minutes then serve immediately.
