Chorizo and Cheese Puffs

- 2 chorizo sausages shopping list
- olive oil shopping list
- 60g butter shopping list
- 1/2 cup water shopping list
- 1/2 tsp salt shopping list
- 1 cup plain flour shopping list
- 2 eggs shopping list
- 1 cup grated mozzarella shopping list
How to make it
- Preheat oven to 200degC. Line 2 baking trays with baking paper.
- Finely dice chorizo and fry in oil til golden. Drain on paper.
- place butter, water and salt in a saucepan over medium high heat.
- As soon as the butter has melted and the water is boiling, add the flour all at once and beat with a wooden spoon until smooth.
- Reduce heat to low and beat until the dough pulls away from the sides of the pan and forms a ball.
- Stir over heat for 2 mins to dry the dough slightly.
- Remove from heat and cook 5 mins.
- Add one egg to dough and beat really well until incorporated and smooth.
- Repeat with remaining egg. Stir in chorizo and mozzarella.
- Using 2 spoons, srop dollops of the mixture onto trays. Flick a little water over them to help produce steam.
- Bake for 20 mins until puffed and golden, and serve immediately!!
