How to make it

  • Preheat oven to 200degC. Line 2 baking trays with baking paper.
  • Finely dice chorizo and fry in oil til golden. Drain on paper.
  • place butter, water and salt in a saucepan over medium high heat.
  • As soon as the butter has melted and the water is boiling, add the flour all at once and beat with a wooden spoon until smooth.
  • Reduce heat to low and beat until the dough pulls away from the sides of the pan and forms a ball.
  • Stir over heat for 2 mins to dry the dough slightly.
  • Remove from heat and cook 5 mins.
  • Add one egg to dough and beat really well until incorporated and smooth.
  • Repeat with remaining egg. Stir in chorizo and mozzarella.
  • Using 2 spoons, srop dollops of the mixture onto trays. Flick a little water over them to help produce steam.
  • Bake for 20 mins until puffed and golden, and serve immediately!!
