Ingredients
  • 1 T olive oil
  • 1 1/2 C chopped onion
  • 2 cloves minced garlic
  • 3 Cans black beans w/liquid (15 oz)
  • 1 can vegetable broth (15 oz)
  • 1 can salt-free tomaotes w/liquid (15 oz)
  • 1 can salt-free tomato puree (15 oz)
  • 1/2 C red wine
  • 4 T sour cream
  • 1/2 C tortilla chips , crushed

Directions
  1. Heat oil on med and add onion & garlic. Saute about 5 minutes until browned.
  2. add remaining canned ingredients and bring to a boil and stir in red wine.
  3. Reduce to simmer and cook another 15 minutes.
  4. Puree the soup in a blender if you prefer.
  5. To serve, top with tortilla chips and sour cream.
