EASY TORTILLA DINNER This recipe came from an estate sale. I obtained it when I purchased the family collection from the Pryor Estate in Grapevine, Texas in 1996.

Ingredients
  • 4 cups brown rice cooked
  • 8 ounces chunky salsa
  • 16 ounces pinto beans drained and rinsed
  • 2 cups frozen corn
  • 12 large flour tortillas
  • 1 package taco seasoning mix
  • 1/2 pound pepper jack cheese shredded
  • 1/2 cup sour cream

Directions
  1. Mix rice, salsa, taco seasoning, corn and beans then heat through.
  2. Spoon into tortillas with cheese and sour cream then serve immediately.
