I made this for my Sister who is a Cheesecake lover. She gave it two thumbs up. Myself who really does not care for cheesecakes was even crazy over this one. It is so easy and worth the wait .

Ingredients
  • Crust:
  • 1 3/4 cup graham wafer crumbs
  • 1/2 cup butter
  • 1 tsp orange zest
  • Filling:
  • 3/4 cup skim milk
  • 1/4 cup rum
  • 1 1/2 tbsp gelatin powder unflavored ( Knoxx)
  • 2 8 oz pkgs light cream cheese
  • 2 cups light eggnog
  • 1 pkg instant fat free vanilla pudding ( 4 serving size)
  • 1/4 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 cup 96% fat free cool whip

Directions
  1. Crust:
  2. Melt butter remove from heat stir in zest add crumbs and press into a spring form pan pressing 1 inch up the sides
  3. Chill 1 hour
  4. Filling:
  5. Combine milk, & rum
  6. Sprinkle gelatin over top let stand 1 minute. Heat in saucepan and stir 1 minute until gelatin is dissolved
  7. Remove from heat let stand 5 minutes
  8. Beat cheese till smooth 3 minutes
  9. Slowly add gelatin beating constantly until smooth
  10. Add next 4 ingredients beating well
  11. Fold cool whip into egg nog mixture
  12. Spread evenly over crust
  13. Chill 3 hours
  14. Top with extra cool whip for serving
