How to make it

  • Saute: onions in skillet over medium high heat with olive oil just untill soft
  • Stir : in garlic cook another minute just untill aromatic
  • ADD; the tomatoes and rosemary continue to cook untill all moisture is evaporated about 10 minutes.
  • LAYER: half the potatoes in prepared casserole season with pepper and salt
  • Now top the potatoes with half the tomatoe mixture and half the cheese
  • Repeat: layer ending with cheese
  • Cover: gratin with foil and bake 30 minutes remove foil and bake another 15 minutes to brown cheese
  • let stand 5 minute to set cheese before serving to set the cheese
