T0matoe -potatoe-gratin

- Saute in 2 tsp. olive oil: 1 yellow onion thinly sliced shopping list
- Stir in: 2 tsp. minced garlic shopping list
- Add and cook:10 roma tomatoes seeded cut into chunks{1 1/2 pounds} shopping list
- 2 tsp. minced rosemary shopping list
- Layer: shopping list
- 4 russet potatoes sliced 1/8 inch thick shopping list
- salt and pepper to taste shopping list
- tomatoe mixture shopping list
- 1 cup swiss cheese grated shopping list
- Preheat oven 450 Spray a large casserole dish with non-stick cooking spray shopping list
How to make it
- Saute: onions in skillet over medium high heat with olive oil just untill soft
- Stir : in garlic cook another minute just untill aromatic
- ADD; the tomatoes and rosemary continue to cook untill all moisture is evaporated about 10 minutes.
- LAYER: half the potatoes in prepared casserole season with pepper and salt
- Now top the potatoes with half the tomatoe mixture and half the cheese
- Repeat: layer ending with cheese
- Cover: gratin with foil and bake 30 minutes remove foil and bake another 15 minutes to brown cheese
- let stand 5 minute to set cheese before serving to set the cheese
