Ingredients
  • Saute in 2 tsp. olive oil: 1 yellow onion thinly sliced
  • Stir in: 2 tsp. minced Garlic
  • Add and cook:10 Roma tomatoes seeded cut into chunks{1 1/2 pounds}
  • 2 tsp. minced rosemary
  • Layer:
  • 4 russet potatoes sliced 1/8 inch thick
  • salt and pepper to taste
  • tomatoe mixture
  • 1 cup swiss cheese grated
  • Preheat oven 450 Spray a large casserole dish with non-stick cooking spray

Directions
  1. Saute: onions in skillet over medium high heat with olive oil just untill soft
  2. Stir : in garlic cook another minute just untill aromatic
  3. ADD; the tomatoes and rosemary continue to cook untill all moisture is evaporated about 10 minutes.
  4. LAYER: half the potatoes in prepared casserole season with pepper and salt
  5. Now top the potatoes with half the tomatoe mixture and half the cheese
  6. Repeat: layer ending with cheese
  7. Cover: gratin with foil and bake 30 minutes remove foil and bake another 15 minutes to brown cheese
  8. let stand 5 minute to set cheese before serving to set the cheese
