  • ....
  • 1 cup cream (single or double)
  • in a complete emergency, sub 1/2 cup oil and 1/2 cup lemonade
  • 1 cup fizzy lemonade
  • 3 1/2 cups self-raising flour
  • or 3 1/2 cups flour mixed w ith 5 teaspoons baking powder
  • 1/4 teaspoon salt

Directions
  1. Method:
  2. Heat oven to 200C
  3. Mix all ingredients to make a soft dough.
  4. Pat out to 2 cm thick (almost an inch) on a floured surface.
  5. Cut out using a floured scone cutter.
  6. Place on a floured (not greased!) baking sheet.
  7. Brush tops of scones with cream/milk if you want a "bought" look.
  8. Bake for 18 - 22 mins until light brown on top and well risen.
  9. If your scones don't rise properly, try making the dough a bit
  10. thicker.
  11. Less than 2cm and they just don't rise.
