This is an easy and different cheese spread that is rumored to be the favorite of First Lady Roselyn Carter.

Ingredients
  • 1lb sharp cheddar cheese, grated
  • 1/2 cup of mayo
  • 1/2 brick of cream cheese (4 ounces), softened
  • 1 small grated onion
  • 1 cup chopped pecans
  • cayenne pepper to taste
  • black pepper to taste
  • 1 jar strawberry preserves

Directions
  1. Combine cheeses, mayo, grated onion;
  2. Season to taste with red and black pepper;
  3. Form into a ring;
  4. Coat with chopped pecans;
  5. Spoon the strawberry preserves into the center of the ring;
  6. Serve with crackers.
