Israeli-style Couscous

- 1 lb dry Israeli-style couscous shopping list
- 1 large onion chopped shopping list
- 1 Tbs. olive oil shopping list
- 2 cups chicken broth shopping list
- 1/2 cup dried chopped cranberries, apricots or raisins (optional ) shopping list
- 1/2 cup chopped nuts ( almonds, pecans etc. also optional ) shopping list
- Chopped fresh parsley for garnish shopping list
How to make it
- In saucepot, saute the onion in the oil until tender.
- Stir in the couscous and cook and stir until pale golden.
- Cover with the broth and bring to a boil and cook and simmer about 10 minutes or until couscous has absorbed the liquid.
- Stir in the cranberries and nuts.
- Remove from heat and let stand covered 10 minutes.
- Fluff with fork
- Season with salt and pepper.
