Mushroom and Onion Reubens

- 8 oz sliced fresh mushrooms shopping list
- 1 cup thinly sliced onions seperated into rings shopping list
- 2 cups sauerkraut rinsed and well drained shopping list
- 8 slices pumpernickel rye bread shopping list
- 3 T. sweet hot mustard shopping list
- 4 slices swiss cheese shopping list
How to make it
- Spray skillet with spray and add mushrooms and onions.
- Cook over med high heat 4-6 min.
- Reduce heat to low; add sauerkraut and cook 4 min.
- Place bread on ungreased cookie sheet and broil 4 inches from heat for 1-2 min. until bread is toasted on one side
- spread mustard on toasted side of 4 bread slices; top each with 1/4 of the sauerkraut mixture, 1 slice cheese and bread slice toasted side down.
- Return sandwich to cookie sheet.
- Broil additional 1-2 min. on each side until bread is crisp and cheese is melted.
