Eggplant Patrice

- 1 small eggplant shopping list
- 4 med. tomatoes,sliced shopping list
- 2 med. green peppers,chopped shopping list
- 2 med onions,chopped shopping list
- seasonings(sugar,salt,pepper,garlic salt) shopping list
- 1/2 to 3/4 lbs sharp cheddar cheese,sliced 1/8' thick( I use shredded now) shopping list
How to make it
- Slice unpeeled eggplant about 1/4" thick.
- Place layer of eggplant in large casserole.
- Add a layer of sliced tomatoes.
- Fill spaces with chopped peppers and onions.
- Sprinkle lightly with each of the seasonings.
- Add a layer of cheese
- Repeat till casserole is heaped high(there is considerable shrinkage during cooking)
- Cover,bake 400 till steaming,about 1/2 hour.
- Uncover,reduce heat to 350 and cook till eggplant is tender and sauce is thick and golden,about 3/4 hour.
